Bogotá Wine and Food had its first edition at a time when few international award-winning chefs visited the country. The Michelin stars or the prestigious guides of the world were foreign to us, the stars of the kitchen were for us those who came out on television and not those who had made a trend in the world cuisine.
so Bogotá Wine and Food was among the first to bring them into the country with the goal of bringing these new trends to the local public and inspire future cooks.
Seven years later, when a new generation of Colombian chefs start to surprise, elaborating unique dishes based on local ingredients, Bogotá Wine and Food 2018 (from 15 to 18 August), wants to be a platform to publicize its results.
This is why it is in these chefs that their programming is based. "It's time for young people to tell us a new story," says Iris Quinn, one of the managers of the business. We found Sebastián Vargas, a Colombian in the Fäviken restaurant in Sweden. There is Manuela Sanín, a pastry chef at Eleven Madison Park in New York. They are the Colombians who do important things. "

For this reason, Bogotá Wine and Food has invited its already traditional "Great tasting night", on August 15th, to ten local chefs who will share their creations.
"We will have chefs under 35, who are doing amazing things and sometimes they work quietly," says Quinn. We need a generational change and we see it in chefs like Alejandro Cuéllar (Canasto) and Iván Cadena (Mesa Franca). "In addition, Álex Nessim (Cali), Miguel Warren (Antioquia) and Leonel Jaramillo (Boyacá), among others.
His second dinner, "La noche cinco estrellas", on August 16th, will have as guests the aforementioned talents who work abroad, as well as the young chefs who have been a revelation in the country in recent years: Álvaro Clavijo (El Chato) and Jaime Rodríguez and Sebastián Pinzón, of Proyecto Caribe.
Both gastronomic evenings will be held at the Seratta Gourmand Market restaurant.
There will also be two academic days on the trends in the kitchen, on 17 and 18 August, at the Escuela Taller de Bogotá (10:00), with many of the invited chefs. Tickets on www.tuboleta.com.
